Dishing It Up Recipe Hop: Slow Cooker Recipes--Barbecue Chicken (Great For The Freezer!)



Today for our Recipe Hop, we are bringing you some more slow cooker recipes.  They seemed to be a favorite last time, and slow cookers are soooo versatile, you can make many, many things in them!

The recipe that I'm going to share with you today can be eaten right away, or put away in the freezer for a pre-cooked dinner at a later time.  Depending on the size of your slow cooker, you can make as little or as few as you would like!

Slow Cooker Barbecue Chicken:


Ingredients:
4-6 pieces boneless skinless chicken breasts (stock up when you see a sale!)
1 bottle BBQ sauce (any kind you have on hand in your pantry is fine).
1/4 c vinegar
1 tsp. red pepper flakes  (optional--since I didn't have any when I made this)
1/4 c brown sugar
1/2 - 1 tsp. garlic powderany other seasonings you would like.

Directions:
Cook in slow cooker on low heat for 4-6 hours.


I made these on a big cooking day.  I didn't eat them right away, but I placed them (along with some sauce) into a freezer bag and froze them.


When it was time to eat them, I simply thawed them and then put them into a baking dish and heated them up in the oven.  I made a side and a vegetable and we had a nice, no hassle (ie. no handling raw meat while attempting to corral toddlers) meal!

I love recipes that do double duty, freezer meals are something I aspire to...just need to do more of. Thanks for sharing!!
