Freezer Breakfast Burritos

This simple freezer meal has absolutely been my kid's favorite.  I made them from fresh flour tortillas that I bought at El Rancho (they were still hot when I got them...yum!).  I put scrambled eggs, breakfast sausage (I found Banquet Brown and Serve brand for $1 at Tom Thumb, and thought it was a good deal, but later found Aldi's version for less), and a bit of shredded cheese.

Here is the mixture cooked in the skillet.


After I cooked the eggs and sausage, I placed a small amount in the center of a tortilla and sprinkled it with cheese.  Then I wrapped them up tightly.



I wrapped each taco up individually in saran wrap, and then I placed them into a big freezer bag.  They can now be pulled out and microwaved as needed.  I ended up making two different sizes, mostly because I ran out of the smaller size, but it turns out that the smaller ones fill up the kids, and the larger ones fill up the adults, so it works out perfectly having both sizes.  If I made them all large, there would be waste, and if I made them all small, we would go through them much faster since I would eat two.

These were super simple to make, and I am planning on making some more very soon, perhaps using bacon instead of sausage.  They are very versatile, and you can add whatever your family likes to them.  Perhaps some salsa or bell peppers would be a nice addition!

I do suggest using freshly made tortillas if you have the option because they are not as dry and much less likely to tear when attempting to wrap them.  If you must buy pre-packaged tortillas (or maybe you have a coupon that makes them free!), microwave them for just a few seconds under a damp paper towel before assembling them to add a bit of moisture and pliability back to them.

Add some tater tots or hash browns. Yummy!
