Menu Plan: 4/2-4/8

I'm on the mend, and trying to get things back organized around here.  Last week I didn't even have a menu plan, and I didn't like it one bit!  We ate from the freezer mostly, and one night i was feeling so bad and had nothing planned, so my husband whipped up some grilled cheeses.  I did get out to the store for some fresh produce on Friday, so over the weekend we had a big salad with some of everything in the fridge tossed in.

My sister in law is going to be spending her Spring Break with us, and she's getting here on Thursday, so that should be lots of fun.

I've planned my meals for the week around what I have on hand, so when I shop this week, I hope to have a plan in mind for the following week.

Here's what's on the menu this week:

Monday:  Ham & broccoli quiche   (I froze it in my pie plate, and I need it to make pies for Easter!)

Tuesday:  Cabbage Roll Casserole

Wednesday:  Beef Stroganoff or something of the sort with things in my pantry.  It'll be good, whatever it is. ;)

Thursday:  Spaghetti  (can you tell I'm thawing a 5lb. block of ground beef?)

Friday:  Gumbo

Saturday:  Tilapia  (subject to change)

Sunday:  EASTER!  Heading to some relatives.

ALDI really is awesome! I found bread and hamburger buns for $0.25 each.

Wow, $.25!?! I shop Aldi too; so fun and easy to save money there. I like the sound of ham and broccoli quiche!
