Tom Thumb Trip 10/31 -- 71% Savings

My Aunt and Uncle are visiting right now, and were very excited to go coupon shopping with me.  We had planned on hitting all of the coupon stores, but after scouring the sale ads and our coupons, we decided that the only place we truly wanted to go was Tom Thumb (it also happened to be the only store she couldn't shop at at home.)

I didn't get a picture of her shopping trip because the majority of it was loaded right up into their truck, but she saved 45% including a bunch of meat and Halloween candy.

Below is what I bought:


Total Shelf Price:  $71.28
Total Sale Price:   $41.19    Already 43% Savings
Price Paid After Coupons:   $20.75    71% Savings

I had FREE coupons for the Pam and the Pizza, and the salads were all FREE after coupons.  The milk was the only urgent thing on my list, and it would have been $0.50 elsewhere, but it was getting to be naptime, so I decided to forgo another stop and grabbed it there.

Dishing It Up Recipe Hop: Main Dishes--Provencal Pork *Great For The Freezer*





For today's Dishing It Up Recipe Hop, my blogger friends and I will be bringing you a collection of main dish recipes.  We all know that the main dish is the most important part of the meal, but most of us have a handful of family favorites that we seem to repeat over and over, and sometimes we just want to try something new.  \

It is our hope that this will help give you a few new ideas for main dishes, and perhaps some new family favorites!

The recipe that I'm going to be sharing with you today is actually the first recipe I ever shared on my blog.  The original post was written in April 2010.  I've not had this meal in quite some time, but since I just stocked up on red potatoes at Aldi, I may be making one (or 4) in the near future.

The recipe is for Provencal Pork, and I originally posted it as a freezer meal because I found it in one of my freezer cookbooks.  I've had it both fresh and after freezing, and it is delicious either way.


Ingredients:
1/4 cup butter, divided
2 lbs boneless pork chops, cut into 1/2 inch thick strips
2 medium onions, sliced
1 15oz can stewed tomatoes
1 1/2 lbs potatoes (I used red, but I've made it with russet before)
season to taste
parsley to garnish

Cooking Directions:
Cook the meat down in half of the butter. (I add some seasoning at this step also, and some of it cooks into the meat and some stays behind in the juice.)
Remove the meat from the pot, leaving the juice behind. Cook down the onions in the juice until they begin getting tender.  Add the stewed tomatoes, and any more seasonings you like. I added salt, pepper, garlic powder, onion powder, and Italian seasoning. 
Heat to boiling, and then let it cook for 5 minutes.

To Assemble:Place the pork on bottom of dish. 
Add the onion and sauce mixture on top of that. 
Place a layer of potatoes on top of that. 
Sprinkle the parsley on top. 
Wrap in in foil. 


If you want to eat it right away, bake for one hour at 350*.  This can also be frozen to be eaten later.  Simply thaw, and follow the baking instructions when you are ready to eat it.

Assembled and ready for the oven.

They are beginning to feature lots of their holiday baking items, so be on the lookout for different varieties of "seasonal" things to be popping up in stores.  Seasonal to them just means items that people only usually buy at certain times of the year, so that's the only time they carry it.  Just another way they cut costs. ;)
