Dishing It Up Recipe Hop: Casseroles






People all around the world enjoy joining together for dinner parties and swap recipes. It's a great opportunity to try out new recipes, add to your recipe box, and spend some quality time with friends.

With the help and expertise of some other fantastic women bloggers, we will be hosting a virtual Recipe Swap each week. Hopefully, you will find this not only fun, but also a great way to find new recipes.  Hopefully you will also find some wonderful new blogs to follow!  We've also decided to move this hop to Monday's to help with all of your menu-planning  needs!

Today our recipe hop theme is going to be all about casseroles. Casseroles are great dishes to make because the are easy, they are frugal, and you can put pretty much any thing you like into one. You can also have them any time of the day, breakfast, lunch, dinner, as a side dish, or even for dessert! Today my dear blogger friends and I are teaming up to bring you a list of our favorite casserole recipes. I hope you enjoy them all!

My dish is going to be---
Enchilada Casserole:
Ingredients:1 pack flour tortillas
2 lbs ground beef
1 can ranch style beans
1 pack taco seasoning
1 can cream of mushroom soup
2 cans enchilada sauce
16 oz grated taco cheese

Instructions:


--Preheat oven to 350 degrees.

--In a skillet brown the meat, drain, and mix in the taco seasoning (follow the directions on the package).

--In a large bowl, mix together the cream of mushroom soup and the enchilada sauce.

--Spoon a small amount of the soup/sauce mixture into the bottom of your casserole dish (to prevent tortillas from sticking).

--Lay down a layer of tortillas, followed by a layer of your meat mixture, then a layer of sauce.  Then sprinkle cheese over it.

--Repeat layers until all ingredients are used up, ending with a layer of tortillas on top.  Cover with extra cheese if desired.

--Bake at 350 degrees for 30-45 minutes or until sauce is bubbly and cheese is melted.


This is a family favorite that my cousin brought home from a friends house one day.  She made it and we all fell in love with it.  My family does not care for the beans, so I leave them out when I make it.  Some people opt for a vegetarian version with no beef and extra beans.  These dishes are very versatile, and you can change them up to fit your own tastes!
