Dishing It Up Recipe Hop: Big Game Day Recipes--Cream Cheese Spinach Dip


Football season is upon us (yay!) and the last thing we want to do around here while there is a game on is to have to be in the kitchen.  We want to be glued to the TV and not miss a minute of the action.  This week my blogging buddies and I have decided to bring you some great easy recipes to serve on game day!


My recipe is a very simple one:  Cream Cheese Spinach Dip

Ingredients:
Frozen Spinach
Cream Cheese   (if using a small rectangle block of spinach, use 1 block of cream cheese.  Use two blocks for the larger bags of Spinach)
Chopped Onions (optional)
Salt/Pepper, etc. to Taste (I usually skip the onions and use onion powder/garlic powder).
*Our Secret Ingredient--I'll tell you below.

Directions:
If using onions, cook them down first on the stove.

Melt down cream cheese and seasoning in pot.  If the cream cheese is sticking, I sometimes add a pat of margarine to the bottom of the pot.

Microwave frozen spinach until mostly thawed, then add this to the post as well.

Stir continuously over low-medium heat until all cream cheese is fully melted and all spinach is fully thawed, and they look well mixed.

Serve with tortilla chips or ritz crackers.


Now, about that secret ingredient...ZATARAIN'S® Concentrated Shrimp & Crab Boil  (That'll link you over to amazon in case you have no clue what I'm talking about).

You gotta be real careful with this stuff, though.  When it says concentrated, it means it.  And it's spicy!  I usually add about half a cap full to mine.  It gives it a little kick, and a great flavor.  So there you are, a little Cajun secret. ;)

When I was searching on Pinterest for an image for this post, I came across something very interesting....a post about batch cooking a recipe similar to this and freezing it!  I'm going to have to try that next time I make this!
