Menu Plan: 4/23-4/29
Strangely enough, I've been in the kitchen all day long (<---big freezer cooking session), and still do not have my menu quite hammered out!
I was so focused on getting the ham shredded and the chicken cooked today, which certainly needed to be done. I made quite a bit of progress, but I'm still not sure what to do with most of the meat. At least it is cooked and will keep a few more days in the fridge for me to decide. ;)
Tonight's dinner was tossed together at the last minute using some chicken I cooked today, and some leftover sides I had in the fridge from last night.
Tomorrow, I plan on trying out a new recipe: a potato soup with ham and broccoli, using the stock that cooked off of the ham. If it's any good I will blog about it. ;)
I also plan to make a soup with my chicken stock and shredded chicken, but I'm not at all sure what kind yet. I don't think I've ever made the same soup twice because I always have different items on hand that get tossed in. Soup is sort of cool like that!
I may opt for chicken fajitas instead since I have bell peppers and onions on hand, and then just freeze my stock for later. I've been meaning to try a neat little trick I saw for freezing it in muffin cups for perfect sized portions, I've just never had any extra. ;)
I will have some leftover meals this week, and some meals to put into the freezer hopefully, and I'm not at all sure what night any of this will take place, but some weeks are just like that.
The important thing is that I saw great sale prices and took advantage of them, so I have plenty of cheap meat to work with! I'm trying my best to only make things that need what I already have so I don't have to make another trip to the store this week.
