Freezer Cooking: Taco Night
I had the makings of some nice soft tacos about to go bad at my house (wilting lettuce, staling tortillas, etc...), and since my husband had picked up ground beef on Wednesday (20lbs of it @ $1/lb...froze half, and put half in the fridge), I decided that tonight should be taco night.
Since I began freezer cooking, I think I've become allergic to making just one meal at a time, but I didn't really have time to "cook" multiple meals tonight. So, what I did was this:
This is going to be a great time saver on busy nights in the future, and it maybe took me 10 minutes longer to brown the larger amount than 1 lb would have taken, so the cooking time was pretty much the same.
Tomorrow, the other 5lbs is going to get turned into hamburger patties and meatballs.

I love cooking ahead any time I can! It makes it so much easier on those nights when I am feeling lazy from a busier day than usual.
Absolutely! I've got a bunch more freezer cooking posts, but this night I was feeling lazy even at that! LOL
