Menu Plan 3/19-3/25
I'm trying to get back into the swing of things after being gone for a week. My aunt and uncle stayed at our house while we were gone, and she made a ham for us on Saturday. I've got lots of ham left to use up, so I'm going to be trying to do that this week. They also have chickens, and brought us up a TON of eggs, so I'm going to be using those up over the next few weeks.
Here's what I have in mind so far for this week:
Monday: Ham & Broccoli Quiche (My aunt made this last time she visited and it was delicious). I'm going to make two and freeze one of them.
Tuesday: Red Beans & Rice (I'm going to drop the ham bone with the meat I couldn't cut off down into the pot with the beans for some extra flavor). I should have about 3 meals of this to freeze.
Wednesday: Sausage Jambalaya My mom always makes this dish in her rice pot, so I'm going to give it a shot. I'll let you know how it turns out.
Thursday: My husband is off, so BBQ Chicken if he feels like grilling or grab something already cooked from the freezer if he doesn't.
Friday: My husband is working, and he doesn't like eggs, so we're going to have breakfast.
Weekend meals are yet to be decided. I'd like to do some grilling outdoors if my husband isn't working.
This week I also plan to get batches of Breakfast Burritos into the freezer (one batch with ham, no doubt), and use up some aging bananas to make breakfast muffins for the freezer.
